Edible Christmas Wreath Salad

Salads are a great side to have with a full Christmas spread. Why not really go the extra mile and create your salad to look like a Christmas wreath?

2 cups chopped Spinach

1 cup chopped Kale

1 large cubed Cucumber

1 cup julienned Green and Red Sweet Peppers

1 cup halved Cherry Tomatoes

¼ cup Pecans or Walnuts

Baked Mac and Cheese

A pasta dish is almost mandatory for Christmas dinner and this baked mac and cheese is so easy to make that it just might become a staple for your 2020 meals!

12 oz pack macaroni

3 tbsp unsalted butter

2 cups milk

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

½ cup shredded Pepper Jack cheese

Add macaroni to a pot of boiling water and boil for approximately 5 minutes or until half cooked. Prepare cheese sauce by heating milk on a low heat. Add butter and allow to melt then slowly add the cheese, whisking as you add to prevent clumping. Add salt and pepper to taste. Once cheese is thoroughly melted slowly add macaroni, again stirring to properly coat. Add macaroni and cheese to a baking dish and bake for 30 minutes at 175 degrees C (350 degrees F).
